Hudspud

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 6 -8 potatoes (the brown ones are fine, peeled and cut up into chunks)
  • 1/4 lb baby carrots (mom says 'a handful', i'd use 1/4 of a bag)
  • 1/4 cup red onion, chopped
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 -2 tablespoon milk
  • salt & pepper

Recipe

  • 1 simmer potatoes, carrots, and red onion in a pot with water, uncovered, until cooked, about 30 minutes. test with a fork to be sure, it should pierce the potatoes easily.
  • 2 drain and remove to a bowl.
  • 3 add butter or margerine, and a splash of milk--not much, because the carrots will make it watery. add salt & pepper to taste. beat with beaters until smooth.
