Flaxseed, Wheat, And Bran Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 1 cup flax seed, ground
  • 1 cup whole wheat flour
  • 1 cup oat bran
  • 1 cup brown sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons cinnamon
  • 1 1/2 cups carrots, shredded
  • 2 -3 apples, cored and chopped up or 2 -3 apples, shredded
  • 1/2 cup nuts, chopped (optional)
  • 3/4 cup milk (2%)
  • 2 eggs, beaten
  • 1 teaspoon vanilla

Recipe

  • 1 mix flour, flaxseed, bran, sugar and dry ingredients together.
  • 2 shred carrots and apples and add these along with optional nuts to dry ingredients.
  • 3 mix well.
  • 4 stir together milk eggs and vanilla and stir this into batter until well moistened.
  • 5 fill cupcake papers until 3.4 full and bake at 350* for 20 to 25 minutes.
  • 6 ( freeze them in ziplock bag, then just pull one out each morning and will be ready to eat 20 minutes later on the way to work! ).
