Flaxseed, Wheat, And Bran Muffins

Ingredients
- 1 cup flax seed, ground
- 1 cup whole wheat flour
- 1 cup oat bran
- 1 cup brown sugar
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons cinnamon
- 1 1/2 cups carrots, shredded
- 2 -3 apples, cored and chopped up or 2 -3 apples, shredded
- 1/2 cup nuts, chopped (optional)
- 3/4 cup milk (2%)
- 2 eggs, beaten
- 1 teaspoon vanilla
Recipe
- 1 mix flour, flaxseed, bran, sugar and dry ingredients together.
- 2 shred carrots and apples and add these along with optional nuts to dry ingredients.
- 3 mix well.
- 4 stir together milk eggs and vanilla and stir this into batter until well moistened.
- 5 fill cupcake papers until 3.4 full and bake at 350* for 20 to 25 minutes.
- 6 ( freeze them in ziplock bag, then just pull one out each morning and will be ready to eat 20 minutes later on the way to work! ).
