Kanji

Total Time: 120 hrs Preparation Time: 120 hrs

Ingredients

  • 1 kg carrot
  • 3 tablespoons mustard seeds
  • 2 tablespoons chili powder
  • 2 tablespoons salt
  • 4 liters hot water
  • 3 mint leaves

Recipe

  • 1 wash and scrape carrots.
  • 2 cut into 4 lengthwise.
  • 3 dry grind the mustard seeds.
  • 4 mix together carrots, salt, mustard seeds and chilli.
  • 5 gently add water, mix well.
  • 6 put the mixture into a large bottle.
  • 7 close lid tightly and keep it in the sun for 5-6 days.
  • 8 shake the bottle a few times daily.
  • 9 chill kanji before serving.
  • 10 sprinkle chopped mint and serve.
