Healthy Carrot Walnut Raisin Salad

Ingredients

- 4 large carrots
- 1/2 cup walnuts, chopped
- 1/2 cup raisins
- 2 teaspoons fresh ginger, grated
- 1/3 cup olive oil
- 1/4 cup honey
- 1 tablespoon lemon juice
- 3 teaspoons apple cider vinegar
Recipe
- 1 put raisins in a bowl and add some water to just cover the raisins and put it in the microwave on high for 45 seconds to plump them.
- 2 shred carrots into a bowl.
- 3 drain water from raisins and add them to the carrots.
- 4 add half of the chopped walnuts.
- 5 toss the carrots, walnuts and raisins.
- 6 for the dressing.
- 7 put the ginger, olive oil, honey, lemon juice and apple cider vinegar in a separate bowl and wisk together.
- 8 pour the dressing over the salad and toss/mix together until the dressing is mixed in well.
- 9 sprinkle the other half of the walnuts on top of the salad.
- 10 chill for 30 minutes.
- 11 serve.
