Healthy Carrot Walnut Raisin Salad

Ingredients

  • Servings: 10
  • 4 large carrots
  • 1/2 cup walnuts, chopped
  • 1/2 cup raisins
  • 2 teaspoons fresh ginger, grated
  • 1/3 cup olive oil
  • 1/4 cup honey
  • 1 tablespoon lemon juice
  • 3 teaspoons apple cider vinegar

Recipe

  • 1 put raisins in a bowl and add some water to just cover the raisins and put it in the microwave on high for 45 seconds to plump them.
  • 2 shred carrots into a bowl.
  • 3 drain water from raisins and add them to the carrots.
  • 4 add half of the chopped walnuts.
  • 5 toss the carrots, walnuts and raisins.
  • 6 for the dressing.
  • 7 put the ginger, olive oil, honey, lemon juice and apple cider vinegar in a separate bowl and wisk together.
  • 8 pour the dressing over the salad and toss/mix together until the dressing is mixed in well.
  • 9 sprinkle the other half of the walnuts on top of the salad.
  • 10 chill for 30 minutes.
  • 11 serve.
