Ingredients

- 1 medium green pepper, chopped and seeded
- 1 tomato, cubed
- 1 carrot, grated
- 1 teaspoon green olives or 1 teaspoon safflower oil
- 1 (10 ounce) bag frozen corn
- 1 tablespoon water

Recipe
- 1 in frying pan, cook green pepper over medium heat about 5 minutes.
- 2 add tomato, carrots, frozen corn and water.
- 3 cover and cook 15 minutes.
- 4 add a dash of pepper before serving.
