Kale Turkey Oven Patties With Veggies

Total Time: 1 hr 20 mins Preparation Time: 10 mins Cook Time: 1 hr 10 mins

Ingredients

  • Servings: 3
  • 2 large carrots, 1/2 inch slices
  • 2 potatoes, 1/2 inch pieces
  • 1/2 onion, quartered
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup onion, minced
  • 4 ounces kale, chopped small
  • 1 lb ground turkey
  • 1/2 cup panko breadcrumbs
  • 1 garlic clove, minced
  • 1/4 teaspoon poultry seasoning
  • 1 tablespoon parmesan cheese, grated
  • 1 egg, lightly beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 bread, slices torn in half
  • 3 tablespoons orange marmalade
  • 1 tablespoon barbecue sauce
  • 1/2 teaspoon hot sauce

Recipe

  • 1 nuke kale and minced onion, covered, for two minutes,stir, and cool--in fridge.
  • 2 preheat oven to 375 degrees.
  • 3 foil line two cookie sheets.
  • 4 mix together veggie mixture and put on one cookie sheet. roast for total of 70 minutes, (stir twice -- after 25 minutes, again after 45 minutes so that it doesn't stick.).
  • 5 put oven patties ingredients in medium bowl and mix, put bread halves onto foil, divide meat mixture into 4, and put one potion onto each bread half. bread will soak up grease and prevent the meat from sticking to foil.
  • 6 roast oven patties for 60 minutes total, combine glaze ingredients, spoon onto patties the last 15 minutes--making sure to cover the kale or it will crisp up.
  • 7 before serving discard bread halves.
