Colorful Lentil Salad

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 1/2 cup dry lentils (preferably the french green variety, they hold their shape better)
  • 1 tablespoon fresh dill, minced
  • 1 1/2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup red bell pepper, chopped
  • 1/2 cup carrot, grated
  • 1/4 cup green onion, minced
  • 1/3 cup cheese, shredded (such as jarlsberg or swiss)

Recipe

  • 1 simmer lentils in water until tender.
  • 2 drain and let cool.
  • 3 mix all ingredients well in a bowl and serve.
