Colorful Lentil Salad

Ingredients
- Servings: 2
- 1/2 cup dry lentils (preferably the french green variety, they hold their shape better)
- 1 tablespoon fresh dill, minced
- 1 1/2 tablespoons lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup red bell pepper, chopped
- 1/2 cup carrot, grated
- 1/4 cup green onion, minced
- 1/3 cup cheese, shredded (such as jarlsberg or swiss)
Recipe
- 1 simmer lentils in water until tender.
- 2 drain and let cool.
- 3 mix all ingredients well in a bowl and serve.
