Down Home Casserole

Total Time: 50 mins Preparation Time: 25 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 6 slices bacon
  • 4 potatoes, peeled and sliced thin
  • 1 large fresh broccoli, chopped
  • 1/2 cup chopped celery
  • 2 carrots, chopped
  • 1 onion, chopped
  • 1 lb kielbasa, cut into 1 inch pieces
  • salt and pepper

Recipe

  • 1 in a large, heavy skillet over medium high heat, fry the bacon until crisp, about 10 minutes.
  • 2 remove the bacon and leave the fat in the skillet.
  • 3 then place the potatoes, broccoli, celery, carrots, and onion in the bacon fat, reduce heat to medium and saute for 5 minutes.
  • 4 place the kielbasa over all, to allow the juices to trickle down over the vegetables.
  • 5 saute for 5 to 10 more minutes, or to desired tenderness on the vegetables.
  • 6 season with salt and pepper to taste.
  • 7 crumble the reserved bacon and return it to the skillet, and stir to combine.
