Low Carb Vegetable Cheese Soup

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • 3 cups broccoli
  • 2 tablespoons butter
  • 1/4 cup red bell pepper, diced
  • 1/2 cup carrot, diced
  • 1/2 cup onion, diced
  • 6 ounces cream cheese
  • 1 cup vegetable broth
  • 1 cup light beer
  • 1 cup colby-monterey jack cheese, shredded
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 steam broccoli until tender.
  • 2 dice onion, carrot, and red bell pepper.
  • 3 saute onion, carrot, and red bell pepper in butter until tender.
  • 4 if in block form, shred cheese.
  • 5 combine all ingredients into a high-sided mixing bowl.
  • 6 use an immersion blender to mix until uniform consistency.
