Easy Sesame Noodle Salad

Ingredients

- 1 lb fresh chinese noodles or 12 ounces dry pasta
- 4 ounces fresh snow peas
- 4 ounces carrots (match stick size)
- 4 ounces green onions, julienned (3 - 4 large)
- 2 -3 tablespoons sesame oil
- 2 -3 tablespoons low sodium soy sauce
- 2 tablespoons toasted sesame seeds
Recipe
- 1 cook noodles, rinse with cold water and spread on a baking sheet or foil to dry. fill a bowl with ice water. bring lightly salted water to a boil, cook carrots for 1 minute, add snow peas and cook for 1 more minute. remove to ice water then put on a towel to dry. combine noodles and vegetables in a large bowl and toss. add oil, soy sauce, and sesame seeds as needed. toss again and chill.
