Easy Sesame Noodle Salad

Total Time: 27 mins Preparation Time: 15 mins Cook Time: 12 mins

Ingredients

  • Servings: 6
  • 1 lb fresh chinese noodles or 12 ounces dry pasta
  • 4 ounces fresh snow peas
  • 4 ounces carrots (match stick size)
  • 4 ounces green onions, julienned (3 - 4 large)
  • 2 -3 tablespoons sesame oil
  • 2 -3 tablespoons low sodium soy sauce
  • 2 tablespoons toasted sesame seeds

Recipe

  • 1 cook noodles, rinse with cold water and spread on a baking sheet or foil to dry. fill a bowl with ice water. bring lightly salted water to a boil, cook carrots for 1 minute, add snow peas and cook for 1 more minute. remove to ice water then put on a towel to dry. combine noodles and vegetables in a large bowl and toss. add oil, soy sauce, and sesame seeds as needed. toss again and chill.
