Erin's Wild Rice Soup

Total Time: 2 hrs Preparation Time: 1 hr Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 6 tablespoons butter
  • 1 tablespoon minced onion
  • 1/2 cup flour
  • 3 cups chicken broth
  • 2 cups cooked wild rice
  • 1/2 cup minced ham
  • 1/2 cup grated carrot
  • 1/2 teaspoon salt
  • 1 cup half-and-half

Recipe

  • 1 melt margarine in saucepan.
  • 2 sauté onion in butter until tender.
  • 3 blend in flour.
  • 4 gradually add broth.
  • 5 stir until boiling and then boil for 1 minute.
  • 6 stir in rice, ham, carrots and salt.
  • 7 simmer about 5 minutes.
  • 8 add half-and-half.
  • 9 heat to serving temperature.
  • 10 to cook the wild rice, i simmer it in a lot of water until they "pop" open and then i drain them until ready to add to the soup.
