Low Fat Beef Barley Soup

Ingredients

- 1 tablespoon vegetable oil
- 1 lb lean stewing beef, diced into small pieces
- 1 tablespoon flour
- 32 ounces fat-free beef stock (usually boxed)
- 1 carrot, diced
- 1 medium onion, diced
- 1 stalk celery, diced
- 3/4 cup pearl barley
- 1/2 teaspoon thyme
- 1 (14 1/2 ounce) can diced tomatoes
Recipe
- 1 add oil into skillet.
- 2 sear diced meat in pan.
- 3 add flour to pan and stir for 1 minute.
- 4 add beef stock to pan and stir.
- 5 add remainder of ingredients.
- 6 simmer 1-2 hours until barley is softened.
