Low Fat Beef Barley Soup

Total Time: 2 hrs Preparation Time: 2 hrs

Ingredients

  • Servings: 6
  • 1 tablespoon vegetable oil
  • 1 lb lean stewing beef, diced into small pieces
  • 1 tablespoon flour
  • 32 ounces fat-free beef stock (usually boxed)
  • 1 carrot, diced
  • 1 medium onion, diced
  • 1 stalk celery, diced
  • 3/4 cup pearl barley
  • 1/2 teaspoon thyme
  • 1 (14 1/2 ounce) can diced tomatoes

Recipe

  • 1 add oil into skillet.
  • 2 sear diced meat in pan.
  • 3 add flour to pan and stir for 1 minute.
  • 4 add beef stock to pan and stir.
  • 5 add remainder of ingredients.
  • 6 simmer 1-2 hours until barley is softened.
