Low Fat Carrot And Fruit Loaf

Ingredients
- 1 cup grated carrot
- 1 green apple, peeled, diced
- 3/4 cup sultana
- 1/2 cup dried apricot, diced
- 3/4 cup water
- 3/4 cup apple juice or 3/4 cup orange juice
- 1/2 cup raw sugar
- 1 teaspoon cinnamon
- 1 1/2 cups self raising flour
- 2 bananas, sliced
Recipe
- 1 place carrot, apple, dried fruit, water, juice, sugar and cinnamon in pot.
- 2 bring to the boil, simmer 15 minutes.
- 3 set aside to cool.
- 4 fold in sifted flours and bananas.
- 5 spoon mixture into greased loaf tin 10 x 20 cms.
- 6 bake 180 c for 50 - 60 minutes or until cooked when tested.
- 7 turn onto wire rack to cool.
- 8 slice and serve with butter.
