Down Home Vegetarian / Vegan Split Pea Soup

Ingredients

  • Servings: 8
  • 1 large onion, diced
  • 6 carrots, sliced
  • 4 celery ribs, sliced
  • 2 cups frozen corn
  • 4 teaspoons better than bouillon, no chicken flavor
  • 8 cups water
  • 1 lb split peas, rinsed
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper

Recipe

  • 1 saute onion in one short spray of cooking spray until just starts to soften. add remaining ingredients except paprika and pepper, bring to a boil. reduce heat to low and simmer covered for one hour or until vegetables are soft. when finished, add smoked paprika and black pepper to taste.
