Carbonado Bolivia

Total Time: 1 hr 30 mins Preparation Time: 20 mins Cook Time: 1 hr 10 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs beef, broiled and cut into cubes
  • 3 cups water
  • 1 teaspoon cider vinegar
  • 1/2 teaspoon salt
  • 1 bay leaf
  • 1/2 teaspoon ground cumin
  • 6 peppercorns
  • 1 garlic, glove crushed
  • 4 celery ribs, sliced
  • 1 medium tomato, diced
  • 1/2 cup peeled and cubed carrot
  • 1 ounce onion, chopped
  • 1/2 teaspoon oregano
  • 4 medium apricots, cut into halves and pitted
  • 4 medium plums, quartered and pitted

Recipe

  • 1 place meat in saucepan with water, vinegar, salt, bay leaf, cumin, peppercorns and garlic.
  • 2 cover and simmer slowly for about one hour.
  • 3 add celery, tomato, carrots, onion and oregano. stir to combine.
  • 4 add fruit. cover and cook until fruits are tender.
