Low Fat Carrot Bars

Ingredients

- 4 eggs
- 1 cup sugar
- 1 cup sugar substitute
- 1 3/4 cups applesauce
- 1/2 cup water
- 1/2 teaspoon salt
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 cup flour
- 1 cup wheat flour
- 3 cups grated carrots
- 2 tablespoons butter
- 3 ounces low-fat cream cheese, softened
- 1 teaspoon vanilla
- 1 3/4 cups powdered sugar
Recipe
- 1 beat the eggs, add the sugar, applesauce, and water. mix well. add the salt, cinnamon, and flours. mix well, add the carrots and mix well. pour into a greased 10 x 15 pan. bake at 350 degrees for 20-30 minutes, until a toothpick inserted in the middle comes out clean. cool completely.
- 2 beat butter and cream cheese until smooth. add remaining ingredients and mix well. spread over the bars.
