Low Fat Carrot Bars

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 48
  • 4 eggs
  • 1 cup sugar
  • 1 cup sugar substitute
  • 1 3/4 cups applesauce
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 cup flour
  • 1 cup wheat flour
  • 3 cups grated carrots
  • 2 tablespoons butter
  • 3 ounces low-fat cream cheese, softened
  • 1 teaspoon vanilla
  • 1 3/4 cups powdered sugar

Recipe

  • 1 beat the eggs, add the sugar, applesauce, and water. mix well. add the salt, cinnamon, and flours. mix well, add the carrots and mix well. pour into a greased 10 x 15 pan. bake at 350 degrees for 20-30 minutes, until a toothpick inserted in the middle comes out clean. cool completely.
  • 2 beat butter and cream cheese until smooth. add remaining ingredients and mix well. spread over the bars.
