- 1/2 cup rice vinegar
- 1/4 cup mirin (sweet rice wine)

- 1 hold each radish by the tip end. shave radishes into ribbons with a vegetable peeler to measure 4 1/2 cups.
- 2 repeat procedure with carrots, shaving to measure 6 cups. combine radishes, carrots, vinegar, and remaining ingredients in a large bowl, tossing to coat.
- 3 cover and refrigerate 4 hours or overnight. store in an airtight container in refrigerator up to 3 days.

- 1 turkey giblets or 1 chicken giblets, neck and liver
- 1 turkey wings
- 1 ham bone
- 1 beef shank
- 6 cups water
- 1 stalk celery, sliced
- 1 carrot, sliced
- 1 onion, quartered with skin gives it a richer color
- 1 bay leaf
- 2 fresh sage leaves
- 2 garlic cloves, peeled
- 1 teaspoon whole black peppercorn

- 1 in a large saucepan, combine the wing, neck and giblets (excluding the liver), 6 cups water, celery, carrot, onion, sage,garlic, bay leaf and peppercorns.
- 2 bring mixture to a boil, reduce heat and continue to cook at a simmer, skimming the froth occasionally for 1 hour.
- 3 add liver and continue to cook at a bare simmer for an additional 30 minutes.
- 4 strain the stock through a fine sieve into a bowl.
- 5 there should be about 3 cups of stock.
- 6 reserve the turkey wing, liver, neck and remaining giblets.
- 7 chop the giblets finely and shred the meat from the wing for the gravy or soup.

- half of a 1 lb. box barilla piccolini pasta, mini wheels
- extra virgin olive oil (evoo)
- 1 (5 ounce) can bumble bee prime filet solid albacore tuna
- 1 1/2 teaspoons parsley flakes
- dried onion flakes, to taste
- sea salt, to taste
- pepper, to taste
- 1 finely grated carrot
- 1/2 of a small tomato, finely chopped
Recipe
- 1 add pasta, 1 tspn. parsley flakes, dried onion (vary amount depending on how much you like onions), sea salt and pepper to a pot of water large enough to cook and stir all ingredients. bring to a boil and then cook 8 minutes (al dente') or 10 minutes (soft). drain in colander and rinse with cold water to chill down the pasta. it is not necessary to remove onion/parsley bits. return to pot after thoroughly drained. drizzle with evoo and stir to coat all pasta, then place pot in refrigerator until completely cooled. to quicken the process place in freezer but keep an eye on it to make sure it's not freezing.
- 2 drain tuna, place in a small bowl and mash with a fork until it's of uniform consistency. add a small amount of evoo, remaining parsley flakes, minced onion to taste, salt & pepper to taste. blend well. when pasta has completely cooled, add tuna mixture, carrot and tomato to pot and blend well. taste and add evoo/seasonings as desired.

- 1 tablespoon olive oil
- 1 tablespoon soy sauce
- 1 tablespoon garlic, minced
- 1/4 teaspoon red pepper flakes

- 1 cup sweet red pepper, thinly sliced
- 1 cup celery, sliced
- 2 cups bean sprouts, rinsed and drained
- 1/2 cup green onion, sliced
- 1 cup frozen peas, thawed
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon cornstarch
- 1 tablespoon cold water
- 1/4 cup sweet chili sauce
- 15 phyllo pastry sheets, cut in half

- 1 in a small bowl mix chicken slices, olive oil, soy sauce, garlic, red pepper flakes and basil. cover and refrigerate for at least 1 hour but no longer than 24.
- 2 heat a large skillet to a medium high heat. add the marinaded chicken, saute until lightly browned.
- 3 add carrots, sweet red peppers and celery. continue to cook until vegetables begin to softened.
- 4 add bean sprouts, onions, peas, salt and black pepper. mix cornstarch with water and set aside.
- 5 once the bean sprouts have softened to your liking, add the cornstarch mixture to thicken the juices.
- 6 stir in the sweet chili sauce and serve.
- 7 preparing spring rolls:.
- 8 allow mixture to cool, for easier handling.
- 9 work with one phyllo leaf at a time. keep the remainder covered with a damp cloth or plastic wrap. they will dry out quickly if not.
- 10 sheets should be cut in half horizontally. lay one sheet out on the counter and give a light coating of cooking spray (or brush with melted butter). fold in half with the short sides together.
- 11 with the short side towards you, place 2 tbsp (or to your liking) of mixture onto the lower third of the phyllo leaf. bring the bottom up over the mixture, then fold in each side. again, lightly coat with cooking spray. roll tightly, and lay on a baking sheet with the seam side down. continue in this manner until all the mixture has been used. give another light coating of cooking spray. at this point, you can freeze them for later use or continue on to bake. with the full recipe, i've been able to make 30 spring rolls.
- 12 preheat oven to 375*. bake for 15 - 20 minutes or until golden brown. bake frozen rolls for 25 - 30 minutes.

- 4 add brown rice and cook stirring often for about 1 or 2 minutes.

- 2 cups jasmine rice, uncooked
- 5 cups water
- salt & freshly ground black pepper
- 1/2 lb snow peas, blanched and shocked (blanching should take less than 8 min. salt the water)
- 1 large carrot, julienned
- 1/4 cup coarsely chopped parsley

- 1 heat the oil in a large saucepan until almost smoking.
- 2 add the onions and cook until soft.
- 3 add the garlic, cumin, nutmeg, coriander and ginger and cook for 1 minute.
- 4 add the rice and coat with the oil and spices.
- 5 add the water, bring to a boil and season with salt and pepper to taste.
- 6 reduce the heat, cover the pot and cook for 15 to 18 minutes.
- 7 remove from heat, fluff with a fork and fold in snow peas, carrots and parsley.
- 8 serve at room temperature.
