Easy Split Pea Soup

Ingredients
- 2 cups dried peas
- 8 cups water
- 1 ham bone
- 1 cup chopped celery
- 1/2 cup chopped onion
- 1/2 cup diced carrot
- 1 bay leaf
- 1/4 teaspoon thyme
- lite salt and pepper
Recipe
- 1 rinse peas, add water, and bring to a boil simmering for 2 minutes.
- 2 remove from heat, cover and let sit for 1 hour.
- 3 add remaining ingredients and heat to a boil.
- 4 reduce heat, simmer, covered 2 1/2 to 3 hours or until peas are soft.
- 5 remove bone and slice up meat adding it to soup.
- 6 enjoy!
