Curly Kale With Raisins, Walnuts And Chili

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 1 tablespoon olive oil
  • 1 onion, sliced into thin rounds
  • 2 carrots, julienned
  • 10 raisins
  • 5 walnuts, crumbled into pieces
  • 4 cups kale, de-stemmed and chopped
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • salt

Recipe

  • 1 heat oil in a large pan. add carrots, onions, raisins, walnuts and chili and saute until onions are soft.
  • 2 add the kale, salt and a couple tablespoons of water. cover pan with a lid.
  • 3 check the kale after a couple of minutes. add more water and cook longer if necessary.
