Easy Winter Soup

Ingredients
- Servings: 4
- 1/2 cup pearl barley
- 5 medium potatoes
- 3 ounces fresh spinach
- 1 carrot
- 14 ounces chicken broth
- 1 tablespoon butter
- 1/2 tablespoon red pepper flakes
- 1/4 cup light cream
Recipe
- 1 cook barley in covered pot till soft.
- 2 drain and put barley aside.
- 3 dice, peel and cook potatoes in chicken broth till soft.
- 4 mash till almost smooth.
- 5 add shredded carrot and finely chopped spinach.
- 6 cook till vegetables soften. 5 minutes.
- 7 add cooked barley and stir to mix.
- 8 add butter and cream right before serving.
