Easy Winter Soup

Total Time: 1 hr Preparation Time: 40 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1/2 cup pearl barley
  • 5 medium potatoes
  • 3 ounces fresh spinach
  • 1 carrot
  • 14 ounces chicken broth
  • 1 tablespoon butter
  • 1/2 tablespoon red pepper flakes
  • 1/4 cup light cream

Recipe

  • 1 cook barley in covered pot till soft.
  • 2 drain and put barley aside.
  • 3 dice, peel and cook potatoes in chicken broth till soft.
  • 4 mash till almost smooth.
  • 5 add shredded carrot and finely chopped spinach.
  • 6 cook till vegetables soften. 5 minutes.
  • 7 add cooked barley and stir to mix.
  • 8 add butter and cream right before serving.
