Glazed Carrots In Sauternes

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 500 g young carrots
  • 125 g butter
  • 3/4 cup sauternes wine
  • 1/2 cup water
  • 1 teaspoon salt
  • 2 tablespoons brown sugar
  • chopped parsley

Recipe

  • 1 cut carrots into slices or strips; place in a saucepan with half the butter, 1/2 cup wine, water & salt.
  • 2 bring quickly to the boil, cover tightly and cook on lowered heat for 10-15 mins depending on size oig carrot pieces.
  • 3 drain off the liquid then add remaining butter, wine & sugar to the pan with carrots and stir until butter has melted, return to heat and finish cooking until carrots are almost tender, stirring & shaking the pan to glaze the carrots evenly.
  • 4 add chopped parsley to serve.
