Glazed Carrots With Ginger

Total Time: 32 mins Preparation Time: 10 mins Cook Time: 22 mins

Ingredients

  • Servings: 4
  • 1 tablespoon unsalted butter
  • 1 lb baby carrots (well scrubbed)
  • 1 tablespoon sugar
  • 1 cup chicken broth
  • 2 teaspoons gingerroot (freshly grated)
  • 2 tablespoons golden raisins
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Recipe

  • 1 melt butter in a large skilloet over medium heat, tilting pan to coat completely.
  • 2 add carrots and cook for 1 minute. add sugar and stir to combine, cook for 1 minute.
  • 3 add chicken broth, grated ginger, raisins, salt and pepper and cook for 20 minutes or until carrots are tender when pierced with a fork.
  • 4 serve warm. makes 4 servings.
