Apricot Carrot Bread

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 12
  • 1 3/4 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/3 cup apricot, dried, minced
  • 1/2 cup carrot, shredded
  • 1/2 cup applesauce
  • 1 egg
  • 2 tablespoons oil
  • 1/2 cup powdered sugar
  • 2 teaspoons apple juice

Recipe

  • 1 preheat oven 350 degrees fahrenheit.
  • 2 spray an 8 x 4 inch pan with non stick cooking spray.
  • 3 combine flour, baking powder, baking soda, salt, and sugar.
  • 4 add apricots.
  • 5 add carrots, applesauce, egg, and oil; stir until just combined; will be thick.
  • 6 pour into baking pan.
  • 7 bake 45 to 50 minutes.
  • 8 cool overnight.
  • 9 next day combine powdered sugar and apple juice for the glaze; pour over top.
