Apricot Carrot Bread

Ingredients

- 1 3/4 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1/3 cup apricot, dried, minced
- 1/2 cup carrot, shredded
- 1/2 cup applesauce
- 1 egg
- 2 tablespoons oil
- 1/2 cup powdered sugar
- 2 teaspoons apple juice
Recipe
- 1 preheat oven 350 degrees fahrenheit.
- 2 spray an 8 x 4 inch pan with non stick cooking spray.
- 3 combine flour, baking powder, baking soda, salt, and sugar.
- 4 add apricots.
- 5 add carrots, applesauce, egg, and oil; stir until just combined; will be thick.
- 6 pour into baking pan.
- 7 bake 45 to 50 minutes.
- 8 cool overnight.
- 9 next day combine powdered sugar and apple juice for the glaze; pour over top.
