Fruit & Veggie Muffins

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • 2 cups shredded shredded cored unpeeled apples
  • 1 1/3 cups sugar
  • 1 cup chopped cranberries
  • 1 cup shredded carrot
  • 1 cup chopped walnuts
  • 2 1/2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 large eggs, beaten at room temperature
  • 1/2 cup vegetable oil

Recipe

  • 1 preheat oven to 375 degrees f.
  • 2 grease 12 muffin cups or line with paper liners.
  • 3 in a large bowl, mix apples and sugar well.
  • 4 add cranberries, carrots and nuts.
  • 5 stir gently to combine.
  • 6 sift together dry ingredients.
  • 7 add to apple mixture and stir well.
  • 8 stir in eggs and oil.
  • 9 mix gently, but thoroughly.
  • 10 divide batter evenly among muffin cups.
  • 11 bake 25-30 minutes.
  • 12 cool 5 minutes.
  • 13 remove to wire rack.
