Holiday Carrots Surprise

Ingredients

• cooking spray
• 4 cups water
• 1/4 teaspoon salt
• 4 (10 ounce) packages matchstix carrots
• 1 teaspoon cinnamon
• 2 tablespoons light brown sugar
• 1/2 cup butter
• 2 (10 ounce) jars all fruit peach fruit spread
• 1 teaspoon rum flavoring (optional)
• 2 eggs, beaten
• 1/4 cup heavy whipping cream
• 1 1/2 cups miniature marshmallows

Recipe

• 1 preheat oven to 400°f spray 2-quart round glass baking dish with cooking spray.
• 2 bring water and salt to a boil. add carrots to boiling water and cook until very tender. remove from stove and drain very well. (remove all water).
• 3 in a large bowl, mash carrots until smooth. add to the mashed carrots the cinnamon, sugar and butter. with mixer, beat until blended.
• 4 add fruit, rum flavoring, eggs, and whipping cream. beat until mixture is smooth.
• 5 pour into baking dish, bake 45 minutes or until set. remove from oven.
• 6 top with miniature marshmallows and bake for a few minutes or until marshmallows start to melt and begin to brown. (do not overcook.).
