French Lentil Soup

Ingredients

  • Servings: 10
  • 3/4 cup ham, lean, cubed
  • 1 1/2 cups lentils, green puy
  • 1 cup dry red wine
  • 1 onion, diced
  • 3 stalks celery, finely diced
  • 1 carrot, finely diced
  • 1/2 cup italian parsley, chopped
  • 2 teaspoons dried rosemary, crushed (or three teaspoons fresh, minced)
  • 1/4 teaspoon salt
  • ground pepper

Recipe

  • 1 place the ham in a soup pot or dutch oven.
  • 2 add 10 cups water and remaining ingredients. bring to a boil over high heat.
  • 3 reduce heat and simmer 1 hour or until lentils are tender and broth is rich.
