French Lentil Soup

Ingredients

- 3/4 cup ham, lean, cubed
- 1 1/2 cups lentils, green puy
- 1 cup dry red wine
- 1 onion, diced
- 3 stalks celery, finely diced
- 1 carrot, finely diced
- 1/2 cup italian parsley, chopped
- 2 teaspoons dried rosemary, crushed (or three teaspoons fresh, minced)
- 1/4 teaspoon salt
- ground pepper
Recipe
- 1 place the ham in a soup pot or dutch oven.
- 2 add 10 cups water and remaining ingredients. bring to a boil over high heat.
- 3 reduce heat and simmer 1 hour or until lentils are tender and broth is rich.
