Ginger Glazed Carrots

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 (16 ounce) bag baby carrots
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 1 (12 ounce) can ginger ale (non-diet)

Recipe

  • 1 steam the carrots using a rice cooker/steamer until they are tender, but not mushy.
  • 2 while the carrots are steaming, grate the ginger.
  • 3 melt the butter in a saucepan and add the ginger.
  • 4 saute the ginger until fragrant.
  • 5 add the ginger ale and the brown sugar.
  • 6 reduce until the sauce coats the back of the spoon.
  • 7 put the carrots into a bowl, pour the sauce over them and toss to coat.
  • 8 serve.
