Ginger Glazed Carrots

Ingredients

- 1 (16 ounce) bag baby carrots
- 1 teaspoon fresh ginger, grated
- 1 tablespoon butter
- 2 tablespoons brown sugar
- 1 (12 ounce) can ginger ale (non-diet)
Recipe
- 1 steam the carrots using a rice cooker/steamer until they are tender, but not mushy.
- 2 while the carrots are steaming, grate the ginger.
- 3 melt the butter in a saucepan and add the ginger.
- 4 saute the ginger until fragrant.
- 5 add the ginger ale and the brown sugar.
- 6 reduce until the sauce coats the back of the spoon.
- 7 put the carrots into a bowl, pour the sauce over them and toss to coat.
- 8 serve.
