Lynn's Favorite Ratatouille

Ingredients
- 3 tablespoons olive oil
- 3 cups eggplants, cubed
- 3 zucchini, sliced
- 1/2 cup green beans, chopped
- 1 cup mushroom, sliced portabellos
- 2 leeks, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 carrot, sliced
- 3 tomatoes, sliced
- 2 garlic cloves, chopped
- 1 tablespoon thyme, chopped fresh
- 1 tablespoon rosemary, chopped fresh
- 1 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper, fresh ground
- 1 teaspoon herbes de provence
- 1/2 cup low sodium chicken broth
Recipe
