Garlic Soup

Ingredients
- Servings: 4
- 2 cups reduced-sodium chicken broth
- 1 cup garlic, cloves peeled
- 1 cup chopped onion
- 1 cup chopped peeled potato
- 1 cup chopped carrot
- salt and pepper
- whipping cream (optional)
Recipe
- 1 combine first 5 ingredients in a medium saucepan.
- 2 bring to a boil.
- 3 cover and reduce heat to low.
- 4 simmer until vegetables are tender, about 25 minutes.
- 5 puree in batches in blender.
- 6 season with salt and pepper.
- 7 rewarm over medium heat.
- 8 pour into bowls and drizzle with cream, if desired.
