Lovely Tuna Noodle Casserole

Ingredients
- 8 ounces noodles, dry (any you like)
- 1 teaspoon canola oil
- 1/2 cup onion, chopped
- 1 teaspoon garlic, minced
- 6 ounces tuna, drained (or double or triple)
- 1 green pepper, chopped (sometimes i use peas instead)
- 1/2 cup carrot, chopped
- 1/4 cup parsley, chopped
- 1/4 teaspoon paprika
- 1/2 cup sour cream
- 1 cup plain yogurt
- 1/2 cup breadcrumbs (flakes, crumbled crackers, etc)
- 1/4 cup parmesan cheese, grated
Recipe
- 1 cook and drain noodles.
- 2 put oil in a hot skillet over medium high heat. saute onion and garlic to transparent.
- 3 move to a bowl. add green pepper, carrots, parsley and paprika. set aside.
- 4 blend yogurt, sour cream and cottage cheese. add noodles and tuna mixture.
- 5 pour into a 9x11 casserole pan.
- 6 combine bread crumbs and parmesan cheese and sprinkle on top of casserole.
- 7 bake for 30-45 minutes or until top is lightly browned.
