Lovely Tuna Noodle Casserole

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • 8 ounces noodles, dry (any you like)
  • 1 teaspoon canola oil
  • 1/2 cup onion, chopped
  • 1 teaspoon garlic, minced
  • 6 ounces tuna, drained (or double or triple)
  • 1 green pepper, chopped (sometimes i use peas instead)
  • 1/2 cup carrot, chopped
  • 1/4 cup parsley, chopped
  • 1/4 teaspoon paprika
  • 1/2 cup sour cream
  • 1 cup plain yogurt
  • 1/2 cup breadcrumbs (flakes, crumbled crackers, etc)
  • 1/4 cup parmesan cheese, grated

Recipe

  • 1 cook and drain noodles.
  • 2 put oil in a hot skillet over medium high heat. saute onion and garlic to transparent.
  • 3 move to a bowl. add green pepper, carrots, parsley and paprika. set aside.
  • 4 blend yogurt, sour cream and cottage cheese. add noodles and tuna mixture.
  • 5 pour into a 9x11 casserole pan.
  • 6 combine bread crumbs and parmesan cheese and sprinkle on top of casserole.
  • 7 bake for 30-45 minutes or until top is lightly browned.
