Judy's Carrot Cake

Ingredients

- 1 1/2 cups oil
- 4 eggs
- 2 cups sugar
- 1 teaspoon vanilla
- 3 cups carrots, shredded
- 1 cup chopped nuts
- 2 cups flour
- 1 teaspoon salt
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 8 ounces cream cheese
- 1/2 cup margarine
- 2 teaspoons vanilla
- 4 1/2 cups confectioners' sugar
Recipe
- 1 for cake: combine oil, eggs, sugar, and vanilla.
- 2 add carrots and dry ingredients.
- 3 pour into a greased 9 x 13 inch pan. bake at 350 degrees f. for 40 - 50 minutes.
- 4 for frosting: beat first 3 ingredients together and add confectionery sugar about a cup at a time.
