Judy's Carrot Cake

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 12
  • 1 1/2 cups oil
  • 4 eggs
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 3 cups carrots, shredded
  • 1 cup chopped nuts
  • 2 cups flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 8 ounces cream cheese
  • 1/2 cup margarine
  • 2 teaspoons vanilla
  • 4 1/2 cups confectioners' sugar

Recipe

  • 1 for cake: combine oil, eggs, sugar, and vanilla.
  • 2 add carrots and dry ingredients.
  • 3 pour into a greased 9 x 13 inch pan. bake at 350 degrees f. for 40 - 50 minutes.
  • 4 for frosting: beat first 3 ingredients together and add confectionery sugar about a cup at a time.
