Garden Vegetable Soup

Ingredients

- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 (28 ounce) can diced tomatoes with juice
- 6 cups vegetable stock
- 2 cups sliced carrots
- 2 cups diced peeled tomatoes
- 2 cups chopped green beans
- 2 cups corn kernels
- 1/4 cup chopped fresh parsley
- salt and pepper
Recipe
- 1 in large pot, sauté onion in butter and olive oil.
- 2 add tomatoes with stock, carrots and potatoes; bring to a boil.
- 3 reduce heat and simmer 20 minutes. add green beans and simmer 5 minutes longer.
- 4 add corn and simmer 5 minutes. stir in parsley. season to taste with salt and pepper.
