Garden Vegetable Soup

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 (28 ounce) can diced tomatoes with juice
  • 6 cups vegetable stock
  • 2 cups sliced carrots
  • 2 cups diced peeled tomatoes
  • 2 cups chopped green beans
  • 2 cups corn kernels
  • 1/4 cup chopped fresh parsley
  • salt and pepper

Recipe

  • 1 in large pot, sauté onion in butter and olive oil.
  • 2 add tomatoes with stock, carrots and potatoes; bring to a boil.
  • 3 reduce heat and simmer 20 minutes. add green beans and simmer 5 minutes longer.
  • 4 add corn and simmer 5 minutes. stir in parsley. season to taste with salt and pepper.
