Italian Mushroom Barley Soup

Ingredients
- Servings: 4
- 1 1/2 quarts chicken broth
- 2 cups tomato juice
- 2 cups chopped tomatoes
- 1/2 cup pearl barley
- 3 cups sliced mushrooms
- 3/4 cup chopped carrot
- 3/4 cup chopped onion
- 2 teaspoons minced garlic
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- salt and pepper
- sour cream (to garnish)
Recipe
- 1 combine all ingredients except salt, pepper and sour cream in slow cooker. cover and cook on low for 6-8 hours.
- 2 season to taste with salt and pepper. top each serving with a dollop of sour cream.
