Garden Soup

Ingredients
- Servings: 4
- 4 cups chicken stock
- 1 cup chopped onion
- 1 cup canned cannellini beans, rinsed and drained
- 1/2 cup diced red bell pepper
- 1/2 cup diced celery
- 1/2 cup diced carrot
- 2 garlic cloves, minced
- 1 bay leaf
- 1 1/2 teaspoons dried italian seasoning
- 1/2 cup diced yellow squash
- 1/2 cup diced zucchini
- 2 medium tomatoes, diced
- salt and pepper
Recipe
- 1 combine all ingredients except squash, zucchini, tomatoes, salt and pepper in slow cooker. cover and cook on high for 3-4 hours, adding squash and tomatoes during last 30 minutes.
- 2 discard bay leaf. season to taste with salt and pepper.
