John's Favorite Carrot Cake With Cream Cheese Frosting

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 3 cups grated carrots (i buy the pregrated in a bag)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 cups sugar
  • 1 teaspoon ground cinnamon
  • 4 eggs, well beaten
  • 1 1/4 cups vegetable oil
  • 1 teaspoon vanilla extract
  • cream cheese frosting
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup butter, softened
  • 1 (16 ounce) package powdered sugar, sifted
  • 1 teaspoon vanilla extract

Recipe

  • 1 cake:.
  • 2 combine first 7 ingredients; stir in eggs, oil and vanilla, mixing well. pour batter into 3 greased and floured 9 inch round cake pans. bake at 350f for 30 minutes or until wooden pick inserted in middle comes out clean. cool in pans 10 minutes; remove from pans and cool on wire racks completely. spread with cream cheese frosting.

  • 4 combine cream cheese and butter, beating until smooth. add powdered sugar and vanilla; beat until light and fluffy. 3 cups.
