Golden Mashed Potatoes

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 6 large red potatoes
  • 1 carrot, sliced
  • 1 cup water
  • 1 teaspoon gluten-free soy sauce
  • 1 tablespoon oil

Recipe

  • 1 peel and quarter the potatoes. place them in a heavy 2-qt sauce pan that has a tight fitting lid.
  • 2 add the carrot, water and tamari sauce.
  • 3 cover and simmer until the vegetables are quite soft. remove from the heat but do not drain.
  • 4 add the oil and whip with electric beaters or a potato masher. if necessary, add a little more water to moisten.
