Golden Mashed Potatoes

Ingredients

- 6 large red potatoes
- 1 carrot, sliced
- 1 cup water
- 1 teaspoon gluten-free soy sauce
- 1 tablespoon oil
Recipe
- 1 peel and quarter the potatoes. place them in a heavy 2-qt sauce pan that has a tight fitting lid.
- 2 add the carrot, water and tamari sauce.
- 3 cover and simmer until the vegetables are quite soft. remove from the heat but do not drain.
- 4 add the oil and whip with electric beaters or a potato masher. if necessary, add a little more water to moisten.
