Honey Apple Glazed Carrots

Ingredients

- 2 tablespoons butter
- 20 baby carrots, peeled and tops trimmed
- 1 1/3 cups unsweetened apple juice
- 2 teaspoons honey
- salt, to taste
- pepper, to taste
Recipe
- 1 melt butter in a nonstick skillet over medium-high heat.
- 2 add carrots to the skillet and saute until the carrots begin to brown slightly, about 8 minutes.
- 3 add apple juice and honey and bring to a boil.
- 4 reduce the heat and simmer until carrots are tender and liquid is reduced to glaze, stirring occasionally, about 15 minutes.
- 5 season to taste with salt and pepper.
