Honey Apple Glazed Carrots

Ingredients

  • Servings: 4
  • 2 tablespoons butter
  • 20 baby carrots, peeled and tops trimmed
  • 1 1/3 cups unsweetened apple juice
  • 2 teaspoons honey
  • salt, to taste
  • pepper, to taste

Recipe

  • 1 melt butter in a nonstick skillet over medium-high heat.
  • 2 add carrots to the skillet and saute until the carrots begin to brown slightly, about 8 minutes.
  • 3 add apple juice and honey and bring to a boil.
  • 4 reduce the heat and simmer until carrots are tender and liquid is reduced to glaze, stirring occasionally, about 15 minutes.
  • 5 season to taste with salt and pepper.
