Jan's Carrot Cake

Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 2 cups sugar
- 1 dash ginger
- 1 1/2 cups vegetable oil
- 4 eggs
- 2 cups grated raw carrots
- 1 (8 3/4 ounce) can crushed pineapple, drained
- 1/2 cup chopped nuts
- optional 1/2 cup raisins
- 1 (8 ounce) package cream cheese, softened
- 1 lb powdered sugar
- 1/2 cup butter, softened
- 1 teaspoon vanilla
Recipe
- 1 preheat oven to 350.
- 2 sift all dry ingredients together.
- 3 stir in oil.
- 4 add eggs one at a time and beat well after each addition.
- 5 add carrots, nuts, and pineapple last.
- 6 pour into 9x13 pan and bake for 35-40 minutes.
- 7 frosting:.
- 8 beat all ingredients together and frost when cake is cool.
