Jan's Carrot Cake

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups sugar
  • 1 dash ginger
  • 1 1/2 cups vegetable oil
  • 4 eggs
  • 2 cups grated raw carrots
  • 1 (8 3/4 ounce) can crushed pineapple, drained
  • 1/2 cup chopped nuts
  • optional 1/2 cup raisins
  • 1 (8 ounce) package cream cheese, softened
  • 1 lb powdered sugar
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla

Recipe

  • 1 preheat oven to 350.
  • 2 sift all dry ingredients together.
  • 3 stir in oil.
  • 4 add eggs one at a time and beat well after each addition.
  • 5 add carrots, nuts, and pineapple last.
  • 6 pour into 9x13 pan and bake for 35-40 minutes.
  • 7 frosting:.
  • 8 beat all ingredients together and frost when cake is cool.
