Magda's Colorful Lentil Salad

Ingredients

  • Servings: 8
  • 3/4 cup lentils
  • 1/2 small onion, diced
  • 1 garlic clove, minced
  • 1 medium carrot, grated
  • 1 small tomato, diced
  • 1/4 cup roasted red pepper, diced
  • 1/2 cup frozen corn
  • 2 tablespoons olive oil
  • 1/2 teaspoon sesame oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon thyme, dried
  • 1/2 teaspoon cumin, ground
  • salt, to taste
  • pepper, to taste
  • fresh cilantro, chopped
  • 1/2 cup feta cheese

Recipe

  • 1 rinse lentils.
  • 2 cook lentils in lots of water until tender but not mushy.
  • 3 drain and rinse briefly in cold water.
  • 4 combine the lentils and vegetables. mix gently to combine.
  • 5 in a small bowl, combine the oils, vinegar and seasonings.
  • 6 add to vegetables and mix gently.
  • 7 add crumbled feta cheese.
  • 8 refrigerate for a minimum of one hour and up to 24 hours to allow flavors to combine.
