Magda's Colorful Lentil Salad

Ingredients

- 3/4 cup lentils
- 1/2 small onion, diced
- 1 garlic clove, minced
- 1 medium carrot, grated
- 1 small tomato, diced
- 1/4 cup roasted red pepper, diced
- 1/2 cup frozen corn
- 2 tablespoons olive oil
- 1/2 teaspoon sesame oil
- 1 tablespoon red wine vinegar
- 1/2 teaspoon thyme, dried
- 1/2 teaspoon cumin, ground
- salt, to taste
- pepper, to taste
- fresh cilantro, chopped
- 1/2 cup feta cheese
Recipe
- 1 rinse lentils.
- 2 cook lentils in lots of water until tender but not mushy.
- 3 drain and rinse briefly in cold water.
- 4 combine the lentils and vegetables. mix gently to combine.
- 5 in a small bowl, combine the oils, vinegar and seasonings.
- 6 add to vegetables and mix gently.
- 7 add crumbled feta cheese.
- 8 refrigerate for a minimum of one hour and up to 24 hours to allow flavors to combine.
