Ham And Bean Soup

Ingredients

  • Servings: 4
  • 8 ounces cubed ham
  • 1/4 cup finely diced celery
  • 1 cup water
  • 1 cup low sodium chicken broth
  • 15 ounces black soybeans (recipe called for eden brand)
  • 1/4 cup tiny diced carrot
  • 2 teaspoons onions, minced
  • 1/4 teaspoon minced garlic (optional)
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt

Recipe

  • 1 in a medium sauce pan brown the ham.
  • 2 add 1 cup of water and scrape glaze off bottom of pan.
  • 3 add low-sodium chicken broth.
  • 4 drain the water from the can of beans. add beans to the sauce pan.
  • 5 add all other ingredients. stir.
  • 6 bring to a boil; turn down heat and simmer for at least 1 hour to bring out the flavors — the longer, the better (3+ hours being best.).
