Ham And Bean Soup

Ingredients

- 8 ounces cubed ham
- 1/4 cup finely diced celery
- 1 cup water
- 1 cup low sodium chicken broth
- 15 ounces black soybeans (recipe called for eden brand)
- 1/4 cup tiny diced carrot
- 2 teaspoons onions, minced
- 1/4 teaspoon minced garlic (optional)
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon cumin
- 1/4 teaspoon salt
Recipe
- 1 in a medium sauce pan brown the ham.
- 2 add 1 cup of water and scrape glaze off bottom of pan.
- 3 add low-sodium chicken broth.
- 4 drain the water from the can of beans. add beans to the sauce pan.
- 5 add all other ingredients. stir.
- 6 bring to a boil; turn down heat and simmer for at least 1 hour to bring out the flavors — the longer, the better (3+ hours being best.).
