Green Kern Soup

Ingredients
- Servings: 6
- 2 cups green kern
- 2 cups boiling water
- 1 teaspoon salt
- 1 medium onion, peeled and minced
- 1 garlic clove, peeled and minced
- 1 carrot, peeled and diced
- pepper, to taste
- 2 quarts stock (use vegetable broth for vegan or vegetarian) or 2 quarts broth (use vegetable broth for vegan or vegetarian)
Recipe
- 1 soak kern overnight; drain well.
- 2 add water and salt; simmer until tender, about 8 hours.
- 3 add onion, garlic, carrot and pepper after two hours of cooking.
- 4 add soup stock from time to time as the water evaporates.
- 5 add any remaining stock at the end of cooking.
