Dilo's Chicken Corn Chowder

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 3 slices hickory smoked bacon
  • 3 boneless skinless chicken thighs or 2 boneless skinless chicken breasts
  • 2 medium sweet onions, chopped
  • 3 carrots, chopped
  • 2 medium potatoes, chopped
  • 2 medium sweet potatoes, chopped
  • 1 (15 ounce) can sweet corn (drained)
  • 3 -5 cups milk (i use skim)
  • 3 dashes ground cinnamon (the missing ingredient)
  • salt and pepper

Recipe

  • 1 in a large pot brown the bacon until crisp (i leave bacon grease for flavoring) and add the chunked chicken. after brown add onions and carrots and allow to simmer and steam for a few minutes. add potatoes and corn, then enough milk to cover it all usually 3 or 4 cups. add the cinnamon then salt and pepper to taste. bring to boil for 5 minutes, turn down to simmer 20 minutes.
