Goulash Soup

Ingredients

  • Servings: 6
  • 1 1/2 quarts beef broth
  • 1 lb lean round beef, cubed
  • 2 cups peeled diced tomatoes
  • 1 cup chopped onion
  • 1 cup cut green beans
  • 1/2 cup thinly sliced carrot
  • 1/2 cup diced celery
  • 2 garlic cloves, minced
  • 1/4 cup pearl barley
  • 1 bay leaf
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dry mustard
  • 1 (15 ounce) can tomato sauce
  • salt and pepper

Recipe

  • 1 combine all ingredients, except tomato sauce, salt and pepper, in slow cooker; cover and cook on low 6-8 hours, adding tomato sauce during last hour.
  • 2 discard bay leaf; season to taste with salt and pepper.
