Goulash Soup

Ingredients

- 1 1/2 quarts beef broth
- 1 lb lean round beef, cubed
- 2 cups peeled diced tomatoes
- 1 cup chopped onion
- 1 cup cut green beans
- 1/2 cup thinly sliced carrot
- 1/2 cup diced celery
- 2 garlic cloves, minced
- 1/4 cup pearl barley
- 1 bay leaf
- 1 1/2 teaspoons paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dry mustard
- 1 (15 ounce) can tomato sauce
- salt and pepper
Recipe
- 1 combine all ingredients, except tomato sauce, salt and pepper, in slow cooker; cover and cook on low 6-8 hours, adding tomato sauce during last hour.
- 2 discard bay leaf; season to taste with salt and pepper.
