Heart Healthy Chicken Cacciatore

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 6 boneless skinless chicken breasts
  • 1 (28 ounce) can plum tomatoes
  • 1 tablespoon light extra virgin olive oil
  • 1 onion, chopped
  • 5 carrots, peeled and sliced thin
  • 4 celery ribs, sliced thin
  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 3/4 teaspoon sage
  • 1/4 teaspoon sugar
  • 1 lb spaghetti

Recipe

  • 1 combine all ingredients except for the chicken and the pasta in a large stock pot.
  • 2 bring to a boil.
  • 3 reduce heat, cover and simmer for 25 minutes.
  • 4 add chicken and cook until tender.
  • 5 serve over cooked spaghetti with optional parmesan cheese.
