Israeli Potato Salad

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 2 lbs red potatoes, unpeeled
  • 1 1/2 cups carrots, cooked and diced
  • 1 cup peas, cooked
  • 1/4 cup chopped red onion
  • 1 dill pickle, diced
  • 3 tablespoons chopped parsley
  • 3/4 cup mayonnaise
  • 1 hard-boiled egg
  • 1 kirby cucumber, peeled and diced
  • salt and pepper

Recipe

  • 1 boil potatoes. simmer 25 minutes. peel and dice.
  • 2 combine with remaining ingredients.
