Ingredients

- 2 lbs red potatoes, unpeeled
- 1 1/2 cups carrots, cooked and diced
- 1 cup peas, cooked
- 1/4 cup chopped red onion
- 1 dill pickle, diced
- 3 tablespoons chopped parsley
- 3/4 cup mayonnaise
- 1 hard-boiled egg
- 1 kirby cucumber, peeled and diced
- salt and pepper
Recipe
- 1 boil potatoes. simmer 25 minutes. peel and dice.
- 2 combine with remaining ingredients.
