Hapa Salad

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 chicken breast
  • romaine lettuce
  • spring greens
  • 1/4 cup juillienned carrot
  • 1/4 cup celery, diagonal cut
  • 1/4 cup scallion, diagonal cut
  • 1 cup peanut sauce
  • 6 ounces rice noodles or 6 ounces fettuccine

Recipe

  • 1 fire grill marinated chicken breast and glaze with teriyaki sauce.
  • 2 cook noodles -- al dente and drain.
  • 3 plate greens carrots celery and scallions.
  • 4 in sautee pan;heat noodles and peanut sauce.
  • 5 add grillied chicken.
  • 6 blend all ingredients.
  • 7 place warm on top of salad greens.
  • 8 top with fresh chopped peanuts and cilantro.
