Italian Meatball Stew

Ingredients

- 1 lb ground turkey (or beef, chicken, dependng on your preference)
- 1/3 cup parmesan cheese
- 1/2 cup oats
- 1 egg
- 1 egg
- 1 teaspoon italian seasoning
- salt & pepper
- 1 (8 -12 ounce) box beef broth
- 1 (10 ounce) can tomato soup
- 1 (10 ounce) can italian-style diced tomatoes
- 1 (10 ounce) can beans
- 1 (10 ounce) can great northern beans
- 3 potatoes, skinned, and chopped
- 1 cup green beans
- 1 cup baby carrots
- 1 teaspoon italian seasoning
- salt & pepper
Recipe
- 1 preheat your oven to 350.
- 2 mix together the ground turkey, eggs, oats, parmesean cheese, and seasonings, mix well.
- 3 on a greased cookie sheet, start rolling your meatballs together, about the size of ping-pong balls, place about an inch and a half to two inches apart. (if using ground turkey you can go a little bigger, they will shrink.).
- 4 place in the oven and cook for about 35 to 40 minutes.
- 5 while your meatballs are cooking, in a large pot, mix all the rest of the ingredients together for the stew. place on medium heat and bring to a boil. then simmer till your meatballs are done.
- 6 once the meatballs are done, place them in the stew, again, bring to a boil, then simmer for about 20 minutes. serve, and enjoy!
- 7 goes great with a side salad and breadsticks!
