Garlic Lentils And Tofu

Ingredients

- 1 (14 ounce) package extra firm tofu
- 1 carrot
- 1 tablespoon olive oil
- 1 garlic clove
- 1 (15 1/2 ounce) can lentils
- 1 teaspoon cayenne pepper
- salt
Recipe
- 1 cut tofu into 3/4 inch cubes.
- 2 cut carrot into small pieces.
- 3 heat oil in a saucepan.
- 4 using a garlic press, add garlic to heated oil.
- 5 cook garlic until browned.
- 6 add carrots and let cook for about 5 minutes, to soften a bit.
- 7 add tofu and let cook for another 5 minutes.
- 8 add lentils and cayenne pepper.
- 9 let cook for another 10 minutes or so.
- 10 serve over rice of your choice!
