Garlic Lentils And Tofu

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 1 (14 ounce) package extra firm tofu
  • 1 carrot
  • 1 tablespoon olive oil
  • 1 garlic clove
  • 1 (15 1/2 ounce) can lentils
  • 1 teaspoon cayenne pepper
  • salt

Recipe

  • 1 cut tofu into 3/4 inch cubes.
  • 2 cut carrot into small pieces.
  • 3 heat oil in a saucepan.
  • 4 using a garlic press, add garlic to heated oil.
  • 5 cook garlic until browned.
  • 6 add carrots and let cook for about 5 minutes, to soften a bit.
  • 7 add tofu and let cook for another 5 minutes.
  • 8 add lentils and cayenne pepper.
  • 9 let cook for another 10 minutes or so.
  • 10 serve over rice of your choice!
