Easy And Pretty Tarragon Vegetables

Total Time: 26 mins Preparation Time: 20 mins Cook Time: 6 mins

Ingredients

  • 1 cup sugar snap pea
  • 1/3 cup water
  • 1 cup carrot, cut into matchsticks
  • 1 1/2 teaspoons butter
  • 1 teaspoon fresh tarragon, chopped
  • 1 1/2 teaspoons dijon mustard
  • 1 teaspoon cider vinegar
  • 1/8 teaspoon salt

Recipe

  • 1 place sugar snap peas and water in a saucepan, bring to a boil and cook 2 minutes.
  • 2 add carrots and butter, cover and cook an additional 2 minutes.
  • 3 stir in tarragon, mustard, vinegar and salt.
  • 4 may serve as a side dish.
  • 5 note: if fresh tarragon is unavailable, may use dried, but start with a pinch, and taste from there. also, the matchstick cut carrots should be about the same length as the snap peas.
